How to Use

Ajillo
× Niboshi Oil
- Peeled shrimp
- 80g
- Mushrooms
- 8–10 pieces
- Broccoli
- 30g
- Garlic
- 1 clove
- Salt
- A pinch
- Niboshi oil
(dried sardine-infused oil) - 150ml
- Pour niboshi oil into a pan, add garlic, and heat gently over low heat.
- When the garlic becomes fragrant, add the mushrooms and shrimp, and simmer over low heat for 10–15 minutes.
- Add pre-boiled broccoli and adjust the flavor with salt.
Unlike olive oil, niboshi oil is infused with the deep umami of dried sardines. It brings out a unique, slightly bitter aroma characteristic of niboshi, creating an ajillo with a distinctly Japanese “和(wa)” essence.
